I enjoy watching your show immensely, my husband is Italian and I have a passion for everything Italian., we have visited Italy several times, including his families home town of Enna. His Mom has shared several of her families recipes with me., but she does not make anything like this. I also would like to know if you have ever heard of a cookie with the name of Da Da's (doedoes) I'm not sure how you spell it. They are a chocolate/spice cookie with a Meringue frosting that hardens. I'm also looking for a recipe for something that sounds like Witchadada's. My Mom-in-law describes them as a pastry type cookie that is filled with a cooked fruit filling. She remembers that her Mom made them every Christmas and I would like to learn how to make these and surprise her. She does not have the recipe for them. Any assistance with this would be appreciated. Thank you.

It has to be PESTO SAUCE! I make my own with the basil that I grow in my garden and the best extra virgin olive oil. I love watching Lidia's cooking show on TV.

My Italian grandmother made sensational stuffed artichokes, drizzled with olive oil. She cooked "fresh from the garden" and the market, so eating at her house was always a treat.

Which italian food is my favorite?

This is a hard question to answer. I like eggplant parmagiana, all kinds of ravioli, lasagna, creative pasta dishes, and northern italian dishes like veal (done in several styles). Italian food is comfort food for me.

What is my favorite Italian Food

Oh boy  that is a difficult question.  Growing up in an Italian family there was never a lack of good food.  Coming home for dinner was always the best part of any day.  Even now, the Eve of Thanksgiving, makes me excited to know what tomorrow will bring.

However, to answer the question I would have to say that my favorite thing is Linquini with White Claim sauce.  This dish fits every season.  It is summer in a dish and Christmas Eve in a nutshell.

 

I can't wait to try some of Lydia's favorites too.

Favorite Italian food?  It has to be osso buco.  I used to have this at a small Italian restuarant in Cleveland Park next to the fire house and Yin Ching Palace.  I can't remember the name and it's gone now, but this dish was extraordinarily tender, tasty and wonderful every time around!

 My mother-in-law's Italian Wedding Soup with the best little meatballs and pastene pasta,

 and stuffed artichokes the way my husband's grandfather used to make:  baked and stuffed with the most delicious breadcrumb/herb/olive oil stuffing. Yummy !

Tortelli Di Mele (Ravioli, Sausage, Granny Smith Apples) also I made a great dish from Mario Batali's cookbook w/Linguini, Mussels and Pancetta. To die for!

my son, DeeJaye, introduced me to tortollinis (sp?) and we both love ravioli, so when we can watch Ms. Lidia's show, we try the pasta stuffings she makes....YU-M-M-MEE!!..we really like the spinach+ ones.....THKS, Ms. Lidia!..and WETA.....!!

The first Italian stuff, i ever had and fancied as a kid was Pizza. I love it. Pizza hut in India is a big deal. I love  Pizzas with the different toppings. Ever since, I tried all diff kind of pizzas, authentic ones to the local ones. I had them all and love them all.

Just one!!???  The one dish that knocked my socks off was Lidia Bastianich cooking orchiette with broccoli rabe on television.  It looked so wonderful that I went out and bought one of her cookbooks just to get the recipe.

Crusty bread with antipasto will give me all the tasty cheeses, cured meats, olives, artichoke hearts, roasted red peppers ... whatever is served with it will fit under my umbrella of 'favorite Italian food!'  Oh, and let's serve a good wine with it.

I only get one choice? Hmmm. I guess eggplant parmigiana but I love nearly all of them: pastas, pastries, sausage and peppers, meats, cheeses, etc.

But eggplant was always a comfort food for me growing up -- something about the melted cheese mixed with the fried eggplant and sauce. Very soothing.

Italian Cooking

I'm in Israel now and will be home for Thanksgiving.  I just crossed into Israel yesterday after a week in Jordan.  I saw the same buffets for seven days in Jordan (mostly lamb, lettuce and tomatoe, hummus, and the same fish).  I really have to send a few really good easy Italian recipes to the five Jordanian hotels which hosted us and feed us the identical dinners.  

 

Maybe there is a central kitchen for buffets in Jordan?

My Italian revelation

I was on a trip to Italy in the early '60s, riding by train from Florence to Naples. A woman on my own, I didn't speak the language and was feeling a bit lost and, on that day, very hungry. My compartment was filled with a merry Italian family, very joyous and loud. When lunchtime came, out came their paper-wrapped sandwiches -- salami, cheeses, olives, such bread. Seeing I had nothing, they shared it all with me. I have never had such wonderful Italian food -- such ANYTHING food. I learned a life lesson that day. It's not the food. It's the people -- human beings sharing life's pleasure and sustenance with a stranger. It comes back to me every time I nibble an olive or drizzle olive oil or experience that earthy, rich salami smell.

I am fascinated by the dry sausages and salamis you can see in any Italian market's butcher shops.  Making those usually is not subject of a cook book but they must be mentioned regardless.

Love Italy

One of the most difficult things to do; how can anyone choose one Italian dish over another? Especially if you have had the luxury of being a guest with an Italian family and been indulged by the amazing home-cooked risottos, pastas of any kind with any sauce, always paired with some kind of wine...I personally love Lidia's Chicken Cacciatora with Eggplant so much that I can eat it everyday!
I have to say the best trip of my life ever was to Bellagio, Italy. I always describe it as one piece of Heaven on earth everyone of us must visit at least once in this life, just in case we don't end up in Heaven later!
